Paleo Baking Must-Haves You Need to Know About

When you've got a killer sweet tooth, the words dessert and diet are an awful combination. But here's one of the (many!) reasons why we are all about living like cavemen: dessert is not off limits! AND without a sugar crash, which is pretty freakin awesome. Apple crumble, banana cake, cookies. Any of these can become paleo-friendly. So if sweet treats are your thing, make sure to stock your pantry with these items. Almond flour It's exactly what it sounds like. Ground up almonds. It's way cheaper (but time consuming) to make it yourself,but almond flour is easy to find at just about any supermarket. It replaces white flour in paleo baking, and works well as a base for things like pancakes (yeah, we know that's not exactly baking but it's still comfort food.) It's super yummy as a topping for a berry crumble too. Raw honey Honey is a great natural sweetener that replaces white and brown sugars. Raw honey is what you really want though, because its full of antioxidants and also has topical benefits. Youll see it's always used sparingly in recipes, and that's intentional. A little goes a long way. Transform cookies by using honey as your sweetener, or as an alternative, you can reach for pure maple syrup or agave. Coconut flour Coconut flour has a texture that's much finer than almond flour, and is naturally a little sweet. It's great for things like chocolate chip cookies (note: youll need the darkest chocolate chips you can find.) Heres a recipe for one that we love: Ingredients: cup coconut flour cup dark chocolate chips 2 eggs coconut oil cup raw honey Pinch of salt 1 tsp vanilla extract Directions:
  1. Preheat the oven to 350 degrees and line a baking sheet with baking paper
  2. Mix all ingredients except chocolate chips, paying close attention to the consistency of your batter.
  3. Whisk until the batter changes from runny to thick. If you don't see a change, add a little coconut flour.
  4. Add the chocolate chips; make sure they're evenly distributed.
  5. Scoop spoonful-sized cookies onto your baking sheet and bake for 10-15 minutes.
Makes about one dozen cookies. Enjoy!
