Grilled Chipotle Chicken

  While you can use chicken breasts for this recipe, thighs are juicer and more flavorful, especially when topped with a chipotle mix. The spices in this recipe are full of antioxidants, not to mention mouth-watering flavor. They also keep the fat in the chicken from oxidizing under hot temperatures. Pair it with a side of fresh grilled vegetables or a side dish such as spicy sweet potatoes.   Ingredients Chicken thighs (2 pounds) 1 tbsp. ground chipotle powder 1 tbsp. dried oregano 1 tbsp. paprika 1/2 tbsp. garlic powder Freshly squeezed lime juice Sea salt and freshly ground black pepper   Preparation Preheat grill to medium-high. Combine ground chipotle, paprika, garlic powder, and salt and pepper in a bowl. Rub chicken with chipotle spice mixture, making sure to cover each thigh. Grill for about 8 minutes per side, skin side down. Flip chicken and cook for additional 8-10 minutes. Drizzle fresh lime juice on top and serve.
