Mango Avocado Salsa

  This is a light and flavorful salsa that works great on just about anything. You can use it to dress up a piece of chicken or fish, such as salmon, or eat it on its own as a snack. A few sprigs of fresh cilantro give this salsa a burst of flavor. This recipe makes 4 to 6 servings.   Ingredients 2 cups diced ripe mango (approximately 2 cups) 1/2 cup finely diced red onion 1 medium Hass avocado, diced (about 1 cup) 1/4 cup minced fresh cilantro 2 tbsp. extra virgin olive oil Freshly ground black pepper Large pinch kosher salt 1/4 tsp. red pepper flakes Juice from 1 lime   Preparation Dice mangoes, then place in a bowl. Add the onions, followed by the cilantro. Add in avocado, salt, and pepper. Add the olive oil. Stir ingredients to combine then adjust to taste if necessary.
