Valentine’s Day Dinner Makeovers: Paleo Style!

“I want to go out for an overpriced, unhealthy Valentine’s Day dinner this year.” - said no one ever.

Even the most decadent of dinners can be transformed into something that’s just as delicious, but way healthier and 100% paleo. All it takes is a little candlelight, soft music, and a home-cooked meal to create a Valentine’s Day atmosphere that even cupid would approve of. Plus your valentine - and your wallet - will thank you for it. Check out this lick-your-lips menu and get cooking.

First Course: Oysters

Besides its fame as an aphrodisiac, raw oysters are already paleo. You can even make a fun activity out of shucking them together. Tag teaming it is a sure-fire way to literally bring you closer together at dinner. And you never know what that could lead to…. (wink, wink.) But if raw shellfish isn’t your jam, oysters are just as delicious steamed with some ghee and herbs. Bacon fat is another option that gives your oysters a boost of extra flavor.

Second Course: Rack of Lamb and Vegetables

Sounds fancy, right? Don’t worry. This is one sophisticated cut of meat that can be a lot easier to cook than you may think. You can even put that theory to the test by checking out the rack of lamb recipe* we included below. And you can never have too many leafy greens, so now’s as good a time as any to use it as a complement to your meat. Try sauteing greens in a little coconut oil for a slightly sweet flavor, or roast some root veggies in the oven (or try both!)

Third Course: Fruit with Chocolate Ganache

No need to sacrifice indulgence on Valentine’s Day. You can go the classic route with strawberries, or mix it up with your honey’s favorite fruits, then drizzle your ganache over it. The good news is that paleo chocolate ganache is super simple to make. As in, you’ll REALLY have to try if you want to mess it up. So here’s the 411: you’ll need a 14 ounce can of coconut cream and some very dark, dairy-free chocolate. (The Enjoy Life brand is always a good one to turn to.) All you’ve got to do is melt the chocolate and coconut cream, then stir until melted and well combined. Easy as promised. Make it even more impressive looking by serving it in a martini glass.

Paleo Rack of Lamb


●      1 rack of lamb

●      1 tablespoon of your favorite dry seasoning

●      Kosher salt and pepper to taste

●      2 tablespoons coconut oil or ghee


●      Preheat your oven to 425 degrees and place a foil-lined baking sheet on a rack in the middle of the oven

●      Season your lamb generously (try to do this up to 24 hours in advance)

●      Heat 2 tablespoons of coconut oil over high heat in a cast iron skillet, then add the lamb, meat side down once the pan begins smoking

●      Allow the meat to sizzle for about 4 minutes, or until a nice crust forms

●      Flip the rack over and cook it for an additional 2 minutes

●      Add the rack into the oven on the baking sheet and roast it for approximately 12-15 minutes.

●      Remove it, loosely tent it with foil, and let it rest for 10 minutes

●      Slice up and enjoy!
